Chef Miguel Teixeira opened the doors to his kitchen to show us in the following video how he achieves a fusion between the Algarve and Japan in one delicious dish.

“We’ll use the sea bass that we brought fresh from the market this morning,” he explains. “We’ll use shrimp, sweet potato, which is quite well known here in the Algarve, peppers, peas, sautéed fresh asparagus, ito togarashi red chili, and wasabi peas.”

Each ingredient is prepared with rigour and care to guarantee the best combinaton of flavours.

Take a voyage through Portuguese cuisine with our Christmas menus. Our chefs have reinterpreted traditional savoury and sweet recipes, and will be preparing them for you.

The dishes will be based on traditional Christmas ones, but always with a natural touch and details, and updated for the present day,” says Chef Teixeira. “Of course there will also be our traditional dishes and delicacies, such as Bolo Rei (Portuguese Christmas cake), rabanadas (sugared French toast), sonhos (fried doughnuts), bacalhau (salt cod) and turkey.

Bacalhau com chalotas (codfish with shallots), cabrito à padeiro com grelos (roast goat and potatoes with greens), bacalhau à pescador (codfish with shellfish) and peru com castanhas (turkey with chestnuts) are among the mains for Christmas Eve dinner and Christmas Day lunch that await you at the Vidamar Resort Hotel Algarve.

Start the New Year with the VidaMar Resort Hotel Algarve

This region bathed by sea and sun is also a great place to spend special dates such as New Year’s Eve.

“We have high expectations for the New Year because it is a festive season that is important in the Algarve, and we will make sure to celebrate it in an interesting way,” says the director of operations of the Vidamar Resort Hotel Algarve, Nuno Salvador.

With that in mind, the Vidamar has created a special programme for New Year’s Eve 2016/2017 on the theme of Tropicalia.

Everything is in place to guarantee unforgettable moments with a celebration inspired by sophisticated high-society parties of the 1930s to 1950s.

Algarve Chefs Week benefit on December 9

Vidamar Resort Hotel Algarve is to host the Algarve Chefs Week fundraiser

It is a Christmas tradition: chefs from the restaurants of 11 five-star Algarve hotels, are once more coming together to prepare the Algarve Chefs Week benefit dinner. This year all money generated by the event – which is to be held on December 9 at the Vidamar Resort Hotel Algarve – is to be donated to regional institutions Apatris 21 and APEXA.

Preparation of the menu for the Algarve Chefs Week event begins with “healthy debate and takes into consideration local seasonal products,” explains Miguel Teixeira, Executive Chef at the Vidamar Resort Hotel Algarve. “Lots are drawn and the chefs are divided into various groups: starter, fish dish, meat dish, dessert,” he goes on.

“Then we choose the ingredients, the garnishes, the sauces, the decorations, the various textures – a thousand and one elements that go to make up each dish – without forgetting the element of surprise when it arrives at your table.”.

This dinner prepared by some of the Algarve’s top hotel chefs will set you back just 30 euros, which also includes admission to a concert by João Só, an artist who this year is adding his support to the cause. “In a season as special as Christmas, it is always a pleasure, a source of great pride and at the same time a challenge to be able to contribute to help these institutions, and to have the Vidamar hosting this event,” stresses Chef Miguel Teixeira. For the fundraising dinner the hope is to have a full house, selling out the 300 places available. “It’s a way for all of us to be able to contribute to offer an early Christmas gift to these people.

So put it in your diary: the Algarve Chefs Week benefit with a concert by João Só is on December 9. Tickets are available at the 11 hotels taking part, including the Vidamar Resort Hotel Algarve.

Aquatica Kids World – where smiles and joy are inevitable!

Junior guests at Vidamar Resort Hotel Algarve will find a unique corner for them here: Aquatica Kids World. It’s the ideal place to make new friends and play!

Games, toys, handicrafts, children’s theatre, face painting, aquatic activities, treasure hunts, a mini disco, pirate’s day and various sports such as archery are just some of the activities available.

Because playing is also an opportunity to learn, staff overseeing the organised activities make sure to include an educational element in them, explains Bárbara Müller, who heads the team.

Each season of the year brings different outdoor activities, but the cinema night and the camping-out night are among those that attract the most children.
Access is free, with the exception of certain one-off activities, and they are aimed at children aged four to 11 of all different nationalities.

“What we aim to achieve is that children leave here happy,” comments Müller. “After all, our mission is spreading smiles.”
The important thing, she stresses, is that “they leave here satisfied and above all with a desire to come back!”

Fresh Algarve fish served at Vidamar

There’s a whole story and a whole team behind every dish served at VidaMar Resort Hotel Algarve.

Fresh ingredients of the finest quality make all the difference, explains executive Chef Miguel Teixeira as he shops for fresh fish at the Caliços municipal market in Albufeira.

Bathed by the cold waters of the Atlantic Ocean, the Algarve coast is known for its top-quality fresh fish, which can be bought in local markets.

Among traditional fish-based local dishes, Chef Teixeira highlights fresh grilled fish such as robalo (sea bass) and dourada (gilthead bream), as well as caldeiradas – fish stews – for example made with a mix of raia (ray) with safio (conger eel) and tamboril (monkfish).

The Algarve’s municipal markets are not just places to buy fresh ingredients but also fascinating spots to visit – both for their architectural interest and as great places to get a taste of local life.

The century-old municipal markets of Loulé and Olhão are probably the region’s most famous. On Saturdays, they are surrounded by stalls set up by local producers to showcase their seasonal wares.

Discover the Algarve all year round, luminous and safe

The Algarve has increasingly been advertising its cultural and natural secrets, while building a reputation as a safe holiday destination – all year round, thanks its mild, sunny climate.


In the far south of Portugal is a region with Europe’s mildest climate and more days of sunshine a year than any other, at about 300: the Algarve. Its mild, relatively dry winters and hot summers are the result of the twin influences of the Atlantic and Mediterranean Sea and its proximity to North Africa.

With so many days of sunshine it is a great place both for holidays and for work.

This luminosity is ever more popular with cinema directors who opt to shoot their films in the Algarve, but it also guarantees holiday photos in colours that will make your friends jealous!


Aside from such factors, there is a whole panoply of ways to enjoy the region, from nature-oriented, cultural or sporting activities, such as bird watching, walking, cycling or local cuisine.

You can’t ski in the Algarve but you can explore the mountains and hills of the interior, the coast, the Ria Formosa estuary, the Rota Vicentina coastal walking route and the Guadiana valley, all thanks to the mild climate,”, says Silva.

Safe, relaxed holidays

The land is here all year round, as are the local products, the climate and the safety”, he points out.

These days safety can count for a lot when people are choosing where to go on holiday.

We all see people in the region going about their daily life and going out at night without problems”, says the tourist board president. “The Algarve is a family destination and one where you will see lots of people on the streets.”

Safety is important not only for the region’s residents but also for visitors, and has been a key factor in establishing the region as a top tourist destination.

Take a trip around the world with a special wine list

Dining at the VidaMar Hotels & Resorts Algarve offers the chance to take a trip around the world, in terms of both food and wine.

Our team has stocked our cellar with wines from all over the world, compiling an excellent list featuring wines from France, Germany, Australia, California, South America and, of course, Portugal.

“We have a vast range of wines from around the globe so that guests can tour the world and not just the Algarve,” explains Fábio Freitas, Food & Beverage assistant at the VidaMar Resort Hotel Algarve.

Sampling fine wines from the Algarve itself can be a great way to get to know the region.

At several regional wine estates the vineyard and winery are open to the public, with visitors able to sample wines and take part in guided tastings.

“All the wines we work with may be tasted at one of the wineries that we work with,” stresses Freitas.

Behind this wine list is a team who actively seek out leading wines and new names, so as to offer something for new guests and regulars.

“What we want is for people to relax and enjoy the setting that we have created especially for them, with just one objective: to be our customers’ favourite hotel,” Freitas declares.
